My husband doesn’t like fatty meat, but he can’t resist this cilantro stir-fried pork belly made by his friend. Every time they get together, he asks his friend to make this dish. Seeing how much he loves it, I tried to recreate it at home. It turned out to be quite delicious.
Cilantro has a unique aroma that some people love and others can’t stand. If you can accept cilantro, its scent can cut through the greasiness of pork belly. Achieving non-greasy fatty meat is the ultimate goal when eating pork belly.
Some might say that pork belly is too fatty and unhealthy. Haha, this isn’t a health and wellness channel; I’m sharing delicious food. There’s no denying that it’s very tasty. Most unhealthy things in this world are delicious, aren’t they?! It’s okay to indulge occasionally!

Choosing Ingredients
If you like fatty meat, choose a fattier pork belly. If you prefer lean meat, choose a leaner one.
🧑🍳 Cook’s Notes
If you usually enjoy fatty meat, you can cut the pork belly into thicker slices to retain more fat. If you don’t like fatty meat, slice the pork belly thinner and cook it longer to render out the fat.
Ingredients
- 400 g(14.1 oz) pork belly
- 120 g(4.2 oz) cilantro
- 25 g(0.9 oz) garlic
- 40 g(1.4 oz) green onions
- 3 g(0.1 oz) salt
- 10 ml(2 tsp) cooking oil
- 5 ml(1 tsp) dark soy sauce
- 15 ml(1 tbsp) light soy sauce

Instructions
- Remove the skin from the pork belly and slice it thinly (you can keep the skin if you like). Smash the garlic, and cut the cilantro and green onions into long sections.
- Heat the cooking oil in a pan over high heat, add the pork belly, and stir-fry until the fat is rendered out, about 3 minutes (cook longer if you don’t like fatty meat).
- Add the salt and garlic, and stir-fry until fragrant.
- Add the dark soy sauce, light soy sauce, and green onions, and stir-fry until evenly mixed.
- Finally, add the cilantro and stir-fry for 10-20 seconds.
